Exciting and Inventive
When looking for a little food adventure, Snowbite is definitely a great place for authentic Vietnamese food in the Rio Grande Valley. My visit to this cute and modern establishment happened to fall on a Friday night around 8 pm. Expecting to find a busy atmosphere on such a staple day for dinner, Snowbite was quite empty. My group of friends and I we greeted by a very welcoming waiter, who seemed genuinely happy to see us. The process of picking our food was made difficult because honestly, everything sounded amazing. Our waiter was happy to explain any item we had questions about. Also we were directed to a few items off of the menu (like if picking from the menu wasn't hard enough.)
Lets get down to the good stuff, the food. The House Special Tostada was our choice for appetizer. Not only was this a beauty to look at, but such a light yet satisfying choice. The tostada had just enough zest and spice in the cabbage; it balanced out the saltiness of the pork which rested on a toasty homemade wonton tostada. The appetizer comes with three tostadas and is dressed with a generous amount of Sriracha, which I’m sure is optional, if that’s not your thing. Honestly, I’d probably come back for the tostadas alone, one of the best of the night.
To quickly round out what we enjoyed, I picked the Ginger Soy chicken, which was not bad. It was a very strong flavor for me, so I’m not entirely positive I’d give it another go, but everyone else enjoyed it plenty and to me that says it’s great, just not my style. It came with a side of sticky rice, made to perfection I might add; and laid under a runny egg. The rice was hands down the best part of this dish. You need to have the rice. I fell in love.
After our entrees, we looked at our options for dessert. SO MANY OPTIONS. They are known for their BRICKALICIOUS, which I’ve heard wonders about, but we picked the Banana Bombers. The bananas looked like little egg/spring rolls, rolled in wrappers and fried. On top was vanilla ice cream drizzled with chocolate sauce, topped with coconut shaving and get this, bacon!!!! Why I’ve never tried these before is a mystery to me, because I want to eat these every day forever. They were crispy, with a nutty chewy quality and the chocolate balanced the ice cream and bacon perfectly.
